This is prepared fresh daily by an Indian grocer in Los Angeles for her clients to eat with her potato samosas. It is hot, complex, and marvelous.
Combine in a food processor or blender and puree, stopping to scrape down the sides as needed:
1 cup lightly packed fresh mint leaves
1/2 cup lightly packed fresh cilantro leaves
1/2 cup coarsely chopped onions
3 small scallions, cut into small pieces
3 fresh jalape├▒o peppers, seeded and cut into small pieces
3 tablespoons water
1 1/2 tablespoons fresh lemon juice
1/4 teaspoon salt
Cover and refrigerate for up to 1 day.
